"Potato Salad"

Ingredients:
potatoes 1/2 kg cut in cubes and boiled
bell pepper 1 large finely chopped
red onions 2 finely chopped
tomatoes 2 cut in cubes
green onions 2 finely chopped
hara dhania 2 tab sp
pudina(mint leaves) 1 tab sp finely chopped
green chillies deseeded 2 finely chopped
mayonaise 2 tabsp
tomato ketchup 2 tabsp
sabat dhania freshly ground or kutta hua 1tsp
white zeera halka saa taway per bhun ker pisa hua 1tsp
salt to taste
lemon juice of 2 lemons
black pepper 1/2 tsp
to make it spicy if u want to add 1 tsp chat masala

Method:
1. Mix together all the above ingredients.

"Mutton Chops or Chicken Legs in Hara Masala"

Ingredients:
1 kg chicken legs or 1 kg mutton chops
2 medium onions, thinly sliced
1 cup yogurt
a bunch or 1 cup hara dhania
6 green chillies, deseeded
1 tsp white zeera
2 large illaichi(bari illaichi)
1 tabsp ginger garlic paste
salt to taste
1/4 tsp black pepper
1/4 tsp garam masala pisa hua
2 large tomatoes
1/4 th cup oil
2 green onions(spring)

Method:
1. Heat oil in a pan over med heat and fry fry onions till golden brown.
2. Remove onions from oil and put in a blender,put green chillies,hara dhania,hara piyaz,tomatoes and yogurt . blend into paste.
3. Fry chicken or chops in the oil till it changes color for 5 mins approx.
4. Add ginger garlic paste zeera,black pepper ground,bari illaichi salt and garam masala and fry for another2 mins.
5. Add the blended mixture and cook on low heat till the chicken is tender and oil starts showing on top.for mutton chops 1 cup water has to be added and cooking time is increased.
6. Garnish the dish with julienne ginger.

"Baked Chicken n Noodles"

Ingredients: (White sauce)
2 1/2 tabsp flour
butter 50 g
1 knorr chicken cube
milk 1 1/2 cups
1/4 tsp salt
1/4 tsp white pepper
Ingredients: (for chicken)
chicken cubes (of 2 breast fillets)
salt 1 tsp
pepper 1/2 tsp
oregano 1/2 tsp
ketchup 1/2 cup
garlic paste 1/2 tsp
oil 2 tabsp
Ingredients: (other)
cheddar cheese to sprinkle on top

Method: (for white sauce)(to be made in the end or else if kept for long it becomes very thicky)
1. Put butter in a saucepan on low heat and let it melt.
2. Then add flour to it stirring constantly so that lumps r not formed fry the flour for a min.
3. Then add milk n the spices and let it cook till it gets slightly thicker (dont make too thick keep it of flowy consistency)
Method: (for chicken)
1. In a pan fry chicken in 2 tabsp oil till they change colour.
2. Now add garli, salt n pepper and stir for a min.
3. Now add Ketchup n oregano and cover with lid n cook till water dries.
Method: (for assembling)
1. Layer an ovenproof dish with noodles.
2. Now spread chicken over it.
3. Now pour white sauce all over it.
4. topwith grated cheese.
5. Bake in oven for 20 minutes atleast or till cheese melts n gets a bit brownish.

"Pizza Sandwiches

Ingredients:
1/4 cup cheddar or mozerella cheese
1/2 cup chicken cubes (boiled on low heat in 2 cups of water 1/2 tsp salt n 1/4 tsp pepper)
1/2 tsp blackpepper
1/2 tsp salt
2 medium sized tomatoes
2 medium sized capsicums
4 bread slices
4 tabsp of chilli garlic sauce
1/2 cup mayonnaise

Method:
1. Shred the boiled chicken roughly by hand into small pieces.
2. Add mayo, salt , pepper and make into paste.
3. Spread it on slices of bread.
4. sprinkle on top with the cheese.
5. Now garnish with tomato, capsicum slices.
6. Bake for 2 minutes or until cheese melts.

"Chicken Pizza"

Ingredients (for dough):
1/2 kg flour
1 tabsp oil
1 tabsp yeast
2 eggs
sugar 2 tabsp
salt 1 tsp
1/2 cup milk slightly warm.
hot water ( if needed when kneading)
Ingredients (for chicken):
boneless chicken cut into cubes (of 2 chicken breasts)
shan chicken tandoori masalah (between 1/4 n 1/2 packet)
ginger paste 1 tsp
Ingredients (for sauce):
2 small oninon, sliced
2 tomatoes, made into paste
ketchup 1/4 cup
salt 1/2 tsp
sugar 1/4 tsp
oregano 1/2 tsp
thyme just a pinch (khatta hota hai)
rosemary 1/4 tsp
pounded red chillies 1 tsp
chilli sauce 1/4 tsp
Ingredients: (for topping)
2 tomatoes, finely chopped
2 small capsicums, finely chopped
2 onions, finely chopped
mushrooms 1/2 can, sliced
olives 1/2 cup, sliced (oil drained properly)
Cheddar cheese 1/2 cup
mozerella cheese 1 cup
oregano to sprinkle on top before baking

Method: (for dough)
1. Mix together all ingredients keeping yeast on the top with hands,
2. Then add milk n form dough use hot water if needed.
3. Then leave it to rise double in size.
Method: (for chicken)
1. Marinate chicken cubes in tandoori masalah for 1/2 an hour in the fridge.
2. Put 2 tabsp oil in a pan and put the marinated chicken in it.
3. Add ginger and fry a bit dont let it burn keep on stirring till light brown.
4. Now put in the marinated chicken cubes n mix well with the ginger.
5. Now lower flame n and cover with lid n cook till chicken cubes become tender n water dries.
Method: (for sauce)
1. Put all ingredients in a sauce pan n cover with lid n cook on low flame till u get a thick sauce.
Method: (for assembling)
1. Roll dough n put on the pizza dish.
2. Spread sauce all over the dough.
3. Now put chicken cubes.
4. Now top the cubes with cheddar cheese.
5. Now spread evenly the tomatoes, onions and capsicums.
6. Now mushrooms n olives.
7. In the end top with mozerella cheese.
8. Bake in oven for 10 minutes by then the dough shud be set otherwise let it bake some more.

"Mutton Leg Roast"

Ingredients:
1 Whole leg of mutton
2 tabsp ginger garlic paste
1 cup vinegar
1 tsp salt
1 tsp black pepper
oil 1/2 cup
water 5 tabsp

Method:
1. Poke the entire leg with a fork.
2. Now marinate overnight with ginger garic paste, vinegar, salt n pepper.
3. put oil in a pan with lid on, on high flame and put leg n it after just 2 minutes then lower heat to minimumand let it cook for 3 hrs atleast(turn it on the other side after every hour) then check by poking with knife whether its cooked through if not let it cook more. Once it is tender increase the flame to fulll n make it brown on both sides.

"Devil Chicken"

Ingredients:
1 kg potatoes, boiled and mashed
* salt 3/4 tsp
* pepper 1/2 tsp
* milk 3 tabsp
1/2 kg chicken boneless, cut into cubes
soya sauce 1/2 cup
2-3 tabsp oil
2 finely chopped onions
1 tsp mustard
2 packets of cream
& chilli sauce 2 tabsp
& ketchup 2 tabsp
& salt 3/4 tsp
& pepper 1/2 tsp
& mustard 1 tabsp
& milk 1/4 cup
Method:
1. Mix ingredients marked with ' * ' into the mashed potatoes till well mixed.
2. Marinate chicken cubes in soya sauce for an hour.
3. Heat oil n fry chicken in it. Cook till chicken is done n the water dries. Take off heat n quickly mix in the mustard.
4. Now mix the ingredients marked with '&' in the cream.
5. Brush the base of an oven proof dish with oil.
6. Spread the potato mixture on the base of the dish evenly, pressing with hands.
7. Now spread the chicken cubes on it.
8. Then lastly pour the cream mixture all over the chicken.
9. Now preheat oven for 15 minutes n put th dish in and let it it cook for 10 minutes.
